Spicy Ramen Noodle Soup

Spicy Ramen Noodle Soup serves 2 to 4

2 to 4 portions of salmon or chicken or tofu

small pack of spinch

pack of bok choi

or pack of stir fry baby veg

2 or 4 tbsp. teriyaki sauce

2 tbsp. miso paste

1 litre chicken or vegetable stock

1inch peeling ginger root roughly chopped

1 stalk lemongrass roughly chopped

2 whole red chilli large or small depending on heat you like – roughly chopped

4 spring onions finely chopped

small bunch coriander finely chopped

wholewheat noodles 1.5 nests per person


Place salmon, chicken, tofu in a bowl and cover in teriyaki sauce marinade for as long as you can.

Make up stock put in large pan, add ginger, lemongrass and chilli simmer on a gentle heat for 20 mins

Cook chicken, tofu, salmon in the oven on 200C for about 15 to 20 mins.

Drain stock and discard chilli etc whisk in miso paste

add bok choy or baby veg, simmer for 3 mins

add noodles simmer for a further 3 mins until cooked

Divide noodles, veg, chicken etc into 2 or 4 bowls

Cover in soup
