Saintly Chips!…. doesn’t seem possible does it?

Hopefully we are all still on track for a healthy and happy start to 2015, but  this is the time for me when the cold and dark of Jan really kicks in.

Being outside and active really helps but there are two things that I just cannot do without to get me through…. cups of tea and the odd chip butty (you can take the girl out of Liverpool..).  BUT chips!  fried, greasy, loaded with calories you exclaim, surely not???  Well not the way I make them…

Saintly Chips

  •  about 1.5 medium potatoes per person
  • 1 to 2 tablespoons rapeseed or olive oil
  • Salt and vinegar

Scrub potatoes clean, peel if you want but it is better to leave skin on.  cut up into chips.

Steam, microwave or boil in a pan with salted water for 10 to 12 mins until parboiled. If you have time leave to completely cool (this will have a chemical effect on the starch in the potatoes to convert more of it to fibre –  its the same principle as cooling and reheating pasta – see the article here.

Heat the oven to 220c about gas mark 8.  Drain chips coat a large baking tray with some of the oil and use the rest to cover the chips (you will need to just use your hands).

Bake for 25 to 30 mins turning regularly.
