Italian Bean Soup

Bag of  Waitrose soffrito (or chop 2 onions, 2 carrots, 4 celery sticks)
1 tbsp. of olive oil
4 garlic cloves crushed
2 tbsp. tomato puree
2 bay leaf
few sprigs of thyme
3 courgettes chopped
400g can of borlotti beans
75g dried green lentils
1.2l vegetable or chicken stock
grated parmesan
small bunch of basil leaves shredded
1. Gently cook the soffrito in the oil in a large saucepan for20 mins until soft.  Splash in water if they stick.  Add the garlic, bay and thyme and cook for 4 to 5 mins on a medium heat until they brown a little.
2. Pour in beans, lentils tomatoes and stock and simmer for 20 mins or until the lentils are cooked.  If you are freezing cool and do so now.  If not serve hot adding grated parmesan and torn basil leaves.
