1 teaspoon ground cumin (or to taste)
Salt and Pepper to taste
Juice half a lemon
Grate whole cauliflower into rice sized pieces which is easiest done in a food processor using a fine grater
attachment. If you blitz with the blade be careful not to chop too finely.
Put in bowl suitable for microwave with tablespoon of water, cover and microwave on full power for 7 mins.
Remove drain water and mix in lemon juice, cumin and seasonings.
Serve with healthy curry or last weeks goulash recipe.
