This recipe is from Weightwatchers, but my whole family like it and given Sarah’s love of pulses I thought I would share. I have simplified it a bit.
1 medium onion, peeled and chopped
1 clove of garlic, peeled and chopped (optional)
1 level teaspoon chili powder
50g red lentils
400g tinned tomatoes
850ml hot water
Soften onion for 5 minutes in a small amount of olive oil, then add the chilli, and the garlic if using. Cook until beginning to brown, about another 5 minutes.
Add the lentils and stir well. Add the tomatoes and hot water (also optional stock cube and/or tomato puree and/or a little rosemary to taste, but I don’t use them).
Simmer for 20 minutes, season to taste. Can be pureed if you like, but soup with some texture is more satisfying (Weightwatchers tip!).
Eat.
